Zesty Lemon Haddock

Haddock cooked on the barbecue tastes fantastic, and combined with the zesty flavours of lemon, garlic and herbs, this recipe is sure to become a barbecue favourite!

Method

  1. Combine the marinade ingredients in a small glass bowl and whisk together well to ensure the oregano blends thoroughly with the lemon juice and oil.
  2. Place the haddock pieces in a shallow glass dish then pour the marinade over the fish, turning the pieces several times to fully coat in the marinade.
  3. Leave the fish, flesh-side down in the marinade. Cover the dish with cling film and refrigerate for at least 30 minutes – no more than 60 minutes.
  4. Clean and prepare the barbecue, preheating to 315C. If you are using a perforated grill topper, oil it very well and place it on the barbecue to heat up. Once the barbecue has reached cooking temperature, place the haddock on the grates (or on the grill topper) and close the lid. After 3 or 4 minutes lift the lid, and with a spatula, carefully turn the fish over. Close the lid and cook the fish for a further 3 – 4 minutes.
  5. Remove the fish from the barbecue when it has turned white, and flakes easily with a fork. Sprinkle marjoram leaves over the fish and serve with Tzatziki sauce on the side. Now sit back and enjoy with all your favourite side dishes.

  • 100 ml Tzatziki
  • 120 ml Lemon Juice
  • 120 ml Lemon Juice
  • 60 ml Olive Oil
  • 1 tbsp Garlic
  • Pinch of Ground Oregano
  • 2 Dashes of Tabasco Sauce
