Fajita Mexican Marinade

This is a great marinade for fajitas, and also works well as a spicy rub for meat or fish.

  • 60ml Olive Oil
  • 60ml Lime Juice
  • 60ml Tequila
  • 2tbsp Chopped Garlic
  • 2 tbsp Coriander
  • 1 tbsp Cumin
  • 1 Jalepeno Pepper (finely chopped)
  • 1 tbsp Oregano
  • Salt & Pepper
  • 1 tsp Cayenne Pepper
  • 1tsp Liquid Mesquite Smoke


  • In a medium-sized glass mixing bowl combine all of the marinade ingredients together. Mix well to ensure the oil combines with the lime and tequila.
  • Place in an air-tight glass jar and use within 2 weeks. 
  • To marinade place meat in a plastic resealable bag and pour in the marinade until covered. Then refrigerate for at least 4 hours, preferably overnight.
