In this Eat Local series of videos, brought to you by The Camping and Caravanning Club, Ali Ray teaches you how to cook some great dishes on your barbecue. Whether like Ali you are rustling up a campsite feast or just entertaining your friends in your back garden, these recipes offer some great inspiration and step-by-step guides to cook up some delicious dishes!

Episode one – smoked mackerel

In the first episode of the Eat Local series, Ali is cooking up a storm with her smoked mackerel. Alongside giving top tips on how to choose the right fish, how to fillet it and what to serve with it, Ali also takes us through how to use smoking chips on the barbecue to infuse the flavour of the dish. 

Episode two – Paella

In the second episode of The Camping and Caravanning Club's Eat Local series, Ali Ray teaches us how to cook a large pan of paella - perfect if you are entertaining large numbers of guests and tasty too! If you don’t have access to a paella pan then this dish can also be cooked in a wok or other large pan if the quantities are reduced.
