Alex James' BBQ'ed Vegetables

A tasty vegetarian treat or a side to your meat dish, this recipe from Alex James will get your mouth watering!

  • 1 large cauliflower
  • 4 whole sweetcorn
  • Butter
  • Salt and black pepper
  • Roll kitchen foil
  • Your favourite salad dressing
  • Soy sauce
  • Lime juice


Grab the cauliflower and place it on a large sheet of foil and wrap it up, then add a second sheet of foil.  Place it on a preheated covered (kettle-style) BBQ and cook for around 1 hour – squeeze it to check if it’s done (minding those fingers) – it should give a little!

Take one of the whole sweetcorns and place it on large piece of foil.  Smear with some butter and sprinkle with salt and black pepper. Then roll the sweetcorn up and twist the ends of the foil so it looks a bit like a Christmas cracker!  Repeat the process for the other three sweetcorn, then place them on the preheated BBQ and cook for about 40 minutes.

Remove vegetables and carefully unwrap.

Finishing touches:

Melt some butter for dipping or use any of your favourite salad dressings.
Tip: Lime juice, soy sauce and butter are a great combination for a dressing.
